I've been looking for gluten-free bread crumbs that are also dairy-free. The pickings are slim at stores, and most choices taste a bit stale with a hint of plastic. I recently had a "light bulb moment" as I was avoiding the heel of my gluten-free loaf: Why don't I make bread crumbs?
Gluten-Free Bread Crumbs
All you need is gluten-free bread and a food processor.
Save the heels of your loaves of bread. I collect them in a zip bag in the freezer. This is also a great solution for the occasional piece of bread that has a huge hole in it.
Thaw the heels in a 300ºF oven for about 5 to 10 minutes for a "fresh bread crumb" style. If you prefer a crispier crumb, toast the heels in the oven a bit longer.
Rip the heels a few times and toss into a food processor, and process until desired consistency. Store gluten-free bread crumbs in a tightly sealed container in the freezer.
