The night I was diagnosed, I had a terrible dream. I was in the grocery store and all the lights went out leaving me with a streak of panic and irrational terror. When I woke up, I thought the dream was pretty funny and right on target. Here I was, a culinary graduate and a food professional, and I had no idea what to buy in the grocery store. My pantry was literally empty as I had spent the previous day emptying it out, so I ventured off to the grocery store without a shopping list.
I started in the gluten free aisle. The choices were overwhelming and the pressure was high...I had to impress my 8-year old daughter. I left the store with several different brands of bread, crackers, cereal, and cake mixes. I wanted to have a variety so that my family could taste for themselves. We were in uncharted territory, and I just wasn't sure about any of it...except that I was already feeling better without gluten in my system.
